Pork shoulder (also known as pork butt or boston butt) is slow roasted in the oven until very tender. Use boneless meat; if you have a bone in cut, you can easily remove the blade bone or ask the butcher to do so. After baking, the meat is tender enough to be shredded to make pulled pork. You can enjoy this as a stew or as a filling for Mexican tacos. I use low carb tortilla wraps to make healthy keto burritos. Leftovers are easy to reheat.
